From the MMM Kitchen: Roast Chicken and Broccoli Pilaf
From The MMM Kitchen, last night's din-din!
CHICKEN: Season chicken legs with soul food salt, both sides. Roast at 375° for 20 minutes per pound.
PILAF:
1 package ramen
1 cup rice
1/2 cup frozen broccoli
2 cups hot water
2 bouillon cubes
Margarine, butter or cooking oil
Break up ramen noodles; saute with rice in margarine/butter (I use olive oil margarine). While sauteing, dissolve bouillon cubes in hot water. When rice/ramen is browned to taste, add bouillon, ramen seasoning, and frozen broccoli. Bring to boil; simmer for 15 minutes or until rice is tender. Fluff with fork, then serve.
