One records each note of a given instrument, such as a violin (or violin section), with different attacks, different dynamics, perhaps other different effects (tremelo, etc.), and compiles an entire library of such sounds for an instrument, a section, or even an entire orchestra. Basically, you now have a field of sounds, recorded by each note, from a variety of real instruments that you can use to replace MIDI input. You can buy libraries from professional recording studios such as the Garritan Orchestral Libraries or the Vienna Symphonic Library.
Depends on the quality (and to an extent, the brand name). The Vienna Symphonic Library's fully blown-out mega-package that they sell is around $21,000 USD last I checked, which provides you with roughly 750GB worth of orchestral samples recorded from the professional Vienna Symphony in Austria. If you have your own equipment and the talent/friends, you can record your own. I remember hearing a major composer (can't think of who currently) even recording bacon grease sizzling in his frying pan to create a hi-hat sample. You could ask Fox himself which set he uses--I THINK it's Garritan, but I can't remember for sure.

No, indeed... It'd be useless unless I buy Cubase or an other DAW. Using Reason, I can't add any VST, only soundfonts and refills.
The miroslav refill for Reason are pretty good, I only need to learn how to fix the sound so it sounds good. Something you have to do on any software, right? Or yours are so great you simply have to compose without caring of the postproduction? It'd justify the price Oo

Well a lot of theory and stuff I learned on my own :> But things like where the instruments are situated in the orchestra, using first, second violin sections, gives you inspiration and new ideas. And I always tweak and mix the sound still, but the actual sounds themselves are amazingly detailed!

The samples I use are probably the best ever made for Reason... Sounds themselves are amazing, and the instruments sampled as well. But the strings sections are just... Powerless. A salad could have played with more energy Oo
If you can softer the attack, you cannot make it harder. That's a terrible negative point :-/
I definitively have to check your sound libraries, but... Does a trial version exists?
