I still had a bunch of leftover chicken thighs from my Tikka Masala recipe, so I decided to kill them off with a recipe that I've done a million different ways :3
Also you can use any other part of the chicken with this too :3
Ingredients:
Chicken thighs (duh :P)
2-3 tablespoons olive oil
salt and pepper
1/2 teaspoon rosemary
1/2 teaspoon oregano
1/2 teaspoon thyme
3 chopped cloves of garlic
2 slices of lemon, squeezed over the chicken
Also folks- if you want to make this more Mediterranean, please don't hesitate to use sliced tomatoes (or even those grape tomatoes) some chopped olives (green preferably) and maybe a splash of white wine (1/4 to 1/3 cup, no more) and maybe a couple of bay/sage leaves scattered over them (which can be removed upon cooking)
Just lightly grease the casserole dish with cooking spray (it'll get more than enough oil from the olive oil and chicken skin XD) and then throw it in the oven at 375 to 400 degrees for 1 hour, turning them over at the halfway mark to ensure an even cooking)

I still need to make your Chicken Tikka Masala. And some naan and basmati rice, to recreate my favorite takeout meal. And a beef samosa.
However, if I don't do that, my Pakistani boss has this great tomato-ginger-garlic sauce he can give to me. I can use it with chicken, some vegetables and the crock pot to make pure awesomeness.
