This is a very easy recipe that I found on AllRecipes.com and its mostly vegetarian (with the exception of grated cheese on top :P)
Ingredients:
2 tablespoons minced garlic (I used 3 cloves)
~ 1/2 chopped onion
3 tablespoons olive oil
1 large head cauliflower, separated into florets
1/3 cup grated Parmesan cheese
salt and pepper to taste (I used 'Cuban salt' which is basically dried red chilies mixed with salt in a grinder)
1 teaspoon fresh parsley
~ Italian breadcrumbs (optional, but I think they added a nice flavor)
To make:
1.) Preheat the oven to 450 degrees and pregrease a large casserole dish.
2.) Put the olive oil and chopped garlic in a large resealable bag, add in the chopped cauliflower, and shake to mix. Pour into the casserole dish and season with salt and pepper to taste.
3.) Bake for 25 minutes (some folks said cover them, I would have to agree, to keep the veggie from drying out- and I did so with tin foil over it, though an oven-proof glass cover might work better) stirring halfway through. Top with Parmesan cheese, breadcrumbs and fresh parsley and then broil that sucker for another 3-5 minutes until golden brown, then serve :3
