It's a bit freaky...but really cool both as an idea and art piece. I found the concept fascinating enough that I speculated headcanon on the whole nature of MissingNos, and how the mutable Eeevee physiology might respond to one's disruptive influence.
(Anyone who actually went and caught a MissingNo knows what weird graphic anomalies and damage to a save file they cause.)

Aforementioned headcanon:
MissingNos aren't actually Pokemon, although Pokemon capture/training gear functions as though they were. They're beings of largely-unformed potential from another continuum. The basic rules governing reality there are radically different, and said continuum can be reached from a small dimensional crossroads deep within the Safari Zone. The creatures aren't very bright, and have no malice or real motives; the 'weird' properties of our dimension's space just makes spending time in Kanto fascinating for them.
Their forms are so alien they seem meaningless, only registering as bizarre visual phenomenon which cause equally bizarre things to happen near them. Their dizzying variety of apparent 'attack techniques' is actually an instinctual knack for profound probability manipulation. A MissingNo can effortlessly make almost anything happen to the fabric of the normal world, but is rarely interested in more than 'sightseeing.'
An Eevee's nature just might let its body weather such 'glitch' emanations without truly becoming warped or harmed. Those emanations might even create a new evolution form that was unnatural but stable.
It's psychological health might be another matter, as esoteric and transcendent mental gibberish kept invading its thoughts.
'Erroreon' would be powerful yet seriously hazardous to it's possessor. I imagine the poor thing would probably show its outsider heritage through strange behavior, unpredictably having fits when in battle or under stress. Panic and delirium would make it lash out in random directions, using sometimes-nonsensical selections from all possible MissingNo techniques.
