Would a "bite" from them turn you into a were-eelektross?

Due to strained research funds and the extreme rarity of the phenomena, such hypotheses have never been tested to any conclusive degree. As the creatures seem to be aggressive solitary hunters (at least as eelektrosses), independent field research is heavily discouraged.

How does it feel to be an eelektross? Do you prefer that form opposed to your human one?

(to be clear, I'm not rp-ing as a were-eelektross here. All the people that could be one declined to comment on the matter. )

Our only info comes from a witness has once claimed to have seen a were-eelektross transform in person. As they describe, the eelektross seemed to be caught off-guard by the transformation, and was somewhat embarrassed by the endeavor. However, continued observation showed that despite the eelektross acting notably feral and instinctual, he was clearly aware of his situation, as he treated his ripped clothes with respect uncharacteristic to a purely feral pokemon. From the rest of the testimony, said eelektross was described as "clearly enjoying himself", "overzealous about his thunder powers, no other hunter is as comically flashy as this", and "oh god I think he noticed me OH **************".

(Given what is known about the eelektross' sensory prowess, it is very likely the eelektross had already sensed the witness the entire time, but did not acknowledge them likely due to lack of interest, or perhaps.... mercy.)

Would there be any way to extract their transformations and use them on ourselves?

Unfortunately that would require getting a hold on the were-eelektross itself, which is a hard ask when we can't even track it properly.

How do they interact with other normal eelektrosses?

Interactions between a normal eelektross and a were-eelektross are likely the same as between two wild eelektrosses (they tend to not mind each other, to my current understanding). Remember: While a were-eelektross in their eelektross form does retain much human behavior and understanding, they are likely still feral eelektrosses, with most if not all instinctual behaviors fully apparent.

(Hmm.. can I stop this and just ask questions directly to you? :P Wanted to know what would you think if I tried and made an eelektross tf. I did use him back when I play pokemon black, and I quite like it. I would say he is my 3rd favorite pokemon)

(My advice? Just go for it when you're ready. The main reason I started posting like a year ago was that there simply wasn't much eelektross tf around, not much other reason. )
