You can somewhat. It's just much, MUCH, easier for Sydney to turn people into non-accurate copies of themselves, thus into more rabbits. Spellfluxed typically have to use force multipliers to change people while monsters have a much easier time changing other critters. So Rabbit + sculpting the snowbeast (corpse?) into a rabbit + and feeding them carrot (cliché rabbit food) + soup is just effective in general vs snow based critters.
Like if you were to turn someone into something that isn't your own style of shape, it would take oodles of effort. That or the person doing it needs to be more powerful than the average spellfluxed. Like turning someone into an otter or something would need fish and shells or something as accessories to evoke the change. letsay seafood chowder would work well in that case. :)
