Rainbowfetti cranberry-walnut muffins
A new take on my last muffin recipe, now with nuts and fruits to make it more “healthy” and not to mention all the colours you get from the funfetti sprinkles!
Here’s what you need:
2 cups milk
1+1/2 cups cornmeal
2 eggs
1/3 cup melted butter
2tsp vanilla
1 cup brown sugar
2+1/2 cups all-purpose flour
1/2tsp baking soda
1/4tsp salt
2tsp baking powder
3tbsp mixed rainbow sprinkles
1/2 cup walnuts
1 cup dried cranberries (raisins work too!)
“WARNING: people/furries with nut allergies can make this without the walnuts if you prefer”
Here’s how to make it:
1-preheat oven to 400f
2-combine milk and cornmeal together in a sturdy bowl
3-mix together eggs+butter+vanilla then add to corn/milk mixture
4-stir in sugar and flour with remaining dry ingredients, then add to corn/milk mixture until all ingredients are fully mixed together, then finally stir in sprinkles
5-fill into a well-greased muffin pan (2-3 spoons for each tin in the pan/until full)
6-bake for 20-25 minutes and let cool for 10-15 minutes
7-Enjoy!
