Got ground beef? Take it, cook it, and serve it without a top!
Here’s how I did it:
1-take ground beef and mix with choice spices, then form into balls with how many Patties you intend to cook
2-place balls onto hot griddle and press/“smash” down into patty shapes
3-grill on both sides until no pink in middle
4-top with choice of shredded cheese and cover with small lid to steam cheese for better melting
5-place cheese-side up onto warm mini tortillas and top with favourite sauces/burger toppings
6-Enjoy!
From Chris: What Nsurfer does not mention (and should) is that the griddle MUST be searing hot.
This is not only to cook the burgers, but also, when you are firmly pressing the burgers onto the skillet, it will make a "Maillard reaction", thus searing the meat on the outside while the meat inside stays moist and juicy. https://byjus.com/chemistry/maillard-reaction/
To test how hot your griddle is, I would suggest using just a small droplet of water, or even a small bit of that ground beef and see how well it cooks. If it doesn't sizzle, obviously your griddle isn't hot enough.
Also optional - I have seen some recipes use chopped onion in this, which not only keeps the meats moist but also gives more flavor to the meat. You can always leave those out, but what's important is that you season the burgers when done cooking.
