Ketchup Rice:
3 Tbs of butter
1 cup of cooked white rice preferably a day old
half an onion dice
1 small carrot diced
1/3 of a colored pepper diced
1/2 zucchini dice
4oz of mushrooms diced (your choice of button, crimini, shiitake, etc)
3 Tbs of ketchup
1/2 tsp of oregano chopped
Omelet:
4 eggs
2 Tbs milk
1/2 tsp salt
1/4 tsp pepper
1/2 tsp garlic powder
1 tsp sugar
Melt 2Tbs of butter in a pan over medium high heat. Add onion and cook for one minute stirring occasionally. Repeat for the carrot, pepper, zucchini an mushrooms. Cook the mushrooms a little longer so they get a nice color. Add a pinch of salt and pepper. Add rice, stir and cook for a minute. Add a pinch off salt, pepper and the oregano. Stir and cook for another minute. Add ketchup and stir cook for and additional minute and remove from the heat.
Beat together all the omelet ingredients. Melt butter in a pan over medium heat. Add the beaten egg occasionally pushing in the edges and swirling the pan so the uncooked egg replaces it. When the omelet is almost cooked through add the rice to the center. Fold the side into the center and flip onto a plate.
Traditionally the omelet is topped with ketchup but i topped mine with hot sauce and soy sauce.
I made my version vegetarian but its usually made with chicken.
