If you're peckish for a pepper recipe, try this from reios !

1 cup white rice
1 1/2 cups warm water
1 tsp sea salt
2 tbsp extra virgin olive oil
1 tbsp roasted garlic oil
1 tbsp grapeseed oil
1 tsp sundried tomato oil
1 tbsp fresh parsley, minced
1 tbsp fresh oregano, minced
1/8 tsp smoked paprika
1/8 cracked black pepper
Sea Salt
1/2 large white onion, diced
2 large stalks celery, diced
4 bell pepper tops, diced
2 cloves garlic, minced
2-3 medium sun-dried tomatoes, diced
1lb ground beef
Grapeseed oil
1/4 cup shredded parmesan
1/4 cup crumbled feta
4 bell peppers, tops removed
Mix the first four ingredients together and place into a rice cooker.
Heat the oils in a medium frying pan, then add the parsley, oregano, paprika, cracked black pepper and sea salt. Fry them until the herbs have significantly wilted. Add the onions, celery and bell peppers. Fry until they've released most of their water, becoming soft. Remove from heat and set aside
Heat grapeseed oil in a medium frying pan and fry beef until browned. Drain roughly half the juice. Add the rice and vegetables to the pan. Fry together for 3 to 5 minutes or until the mixture is evenly heated. Remove to a large bowl.
Mix in feta and parmesan. Taste and add salt if desired. Spoon mixture into hollowed out bell peppers and set them on a baking tray. Sprinkle large feta crumbs over top and broil until the feta has been browned, no more than 5 minutes. Remove from tray and serve hot. I suggest on a nest of the left over rice mixture.
