Hey there guys! Sorry I haven’t posted in a while, long story short I’m on a diet for my wedding in 9 months!
Anywho! I’m on a diet streak and I wanted some chicken parm and I made the healthy version! Here’s the recipe!
For 2 people:
2 chicken breasts, butterflied
Salt
Pepper
Partially grilled on the grill or George Forman. Both sides grilled but not completely cooked.
In a Pyrex baking dish lay a bed of tomato sauce (I used Rao’s Bc it has 1/4 of the sugar prego uses) down, about 1/3 of a 40oz jar with 1/3 cup of water. Mix well.
Remove chicken from grill and place in Pyrex dish, cutting up a fresh tomato and layering it on top of the chicken and slicing fresh mozzarella on top of that.
Place in a 350 degree F oven for about 20 mins or so, till the cheese is nice and melted and the chicken has finished cooking.
Now I like my spice!!! So i slivered up fresh Thai chiles, about 4, and sprinkled them all over my chicken and sauce before baking with a little fresh parsley!
For the pasta, I used Trine pasta, if you’re lucky to have it available, Amazon is a good place to order it too!
