This comes back from my Father's birthday when I cooked him up a multi-course meal to celebrate. The appetizer for the meal I made was some roasted red pepper hummus.
Hummus is something that is quite delicious, easy to make if you have a FOOD PROCESSOR, and is high in protein so relatively nice on most diets (especially if you make it at home so you know just what is in it.)
One ingredient that is traditional to hummus is something called Tahini, wihich is a roasted sesame paste. You can find it in most megamarts out there nowadays and definitely in your middle eastern specialty stores. If you can't (Or just can't afford it) you can cheat and use Peanut butter as a substitute. They are similar in texture and so will work from a texture aspect, though peanut butter tends to run a little sweeter and a stronger nutty flavor.
Recipe
One can Chickpeas. (Drain, but reserve the liquid.)
1/2 cup roasted red peppers
1/4 cup Tahini (I recommend eyeing this or else measure in a cup with a little cooking spray on the inside, it's sticky stuff!)
1 Tbsp lemon juice
4 cloves garlic
1 tsp sea salt or kosher salt
1 tsp fresh ground black pepper
garnish - Paprika, sesame seeds, and a little parsley or cilantro for color.

Toss in Chick peas, Lemon, Garlic, Roasted Red Peppers, Salt, and pepper into food processor. Start combining them, slowly, add in the reserved liquid from the can. (You might not need all of it, you might need just a little extra water. You are aiming for a thick, paste consistency.) Add in Tahini, process until nice and creamy smooth.
Serve with baked Pita Chips or tortilla chips. (The particular meal I did tortilla chips that I baked and topped with sesame seeds, though nowadays I simply buy pitas, cut, spray with cooking spray, season, and bake at 400 for about ten to twelve minutes until nice and crisp. )
