no big pockets that I see.. but... the outside is a little to toasty and the inside is a little to soft to be good for slicing into smaller sandwiches like I planned.
It's really good though.. been eating it plain all night now.. haha.. would be good with a dipping sauce

Yes a lower temp would be good, browns a bit slower and gets well done. Don't forget to thump the bottom for the hollow sound to be sure that it's well cooked. I find that baking stones really hone your skills and get that heat transferred perfectly...but then you've gotta watch the form, make sure that your dough has the strength to hold up to free-form baking to rise... and really crank up that oven temp too. Stones love the heat but you've gotta get them hot like an hour before you put the loaf in and that uses a lot of energy and makes much heat in the house. I guess that's why I just buy bread now; that and I'm lazy. ;D
