It may not sound to everyone like the most appetizing thing ever, but trust me when I say almond jelly is a real delight to eat, and it's very easy to make too! If you'd like to whip up your own batch of this chilled Chinese goodie, just follow these directions!
Ingredients:
- 1 2/3 cups of water
- 2 pouches of unflavoured gelatin powder
- 1/2 cup of sugar
- 2 tsp of almond extract
- 1/2 cup of milk
- 1 can of whole lychees
- 1 can of coconut milk
Recipe:
1. Boil the water, measure it out and pour it into a mixing bowl, then sprinkle the gelatin powder in and stir with a spoon until the gelatin is dissolved.
2. Add the sugar and use a whisk to gently mix until the sugar has mostly or entirely dissolved as well.
3. Add the milk and almond extract and keep whisking until everything is well combined.
4. Pour the mixture into a square pan, cover it and chill it in the fridge for at least 3 hours.
5. Take the jelly out of the fridge and cut it diagonally one way and then horizontally.
6. Place 1 lychee into each serving dish being used and arrange 5 pieces of jelly around it. The idea is to make it look a bit like a flower.
7. Add 2 tbsp of syrup water from the lychee can and 1 tbsp of coconut milk to each serving.
And just like that, you've made and served up a delicious batch of almond jelly! You'll probably even find yourself wanting a second helping when you're done--I sure did!
