Again- taken from AllRecipes.com, done by "SRKELZ" and cooked by yours truly...
*= Additional optional ingredients
4 cloves garlic, minced
1 teaspoon kosher salt
1 pound ground lamb
1 pound ground turkey burger* (yes, this isn't in the original recipe, but I wanted to use it to tone down the lamb-ness of it :P)
[...This was NOT a good idea on my part- so instead use 1 pound of ground beef or pork- even veal if you're on a budget as suggested by other furs]
3 tablespoons grated onion (actually, chopped in this :P)
1/2 cup chopped scallions* (this might have been not so good to add, but they needed to be used and were leftover in the fridge)
3 tablespoons chopped fresh parsley
3 tablespoons chopped mint*
1 tablespoon ground coriander
1 teaspoon ground cumin
1/2 tablespoon ground cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon cayenne pepper
1/4 teaspoon ground ginger
1/4 teaspoon ground pepper
1 teaspoon caraway seeds* (It goes well with lamb, I think itll add a nice touch)
1 teaspoon curry powder*
1 egg* (also not in the original recipe, but it wasnt binding properly- I'd have to say you will definitely need to add it in, even if it doesnt call for it!)
To make:
1.) Mash the garlic into a paste with the salt using a mortar and pestle or the flat side of a chef's knife on your cutting board. Mix the garlic into the lamb & turkey burger combo along with the onion, scallion, spices and fresh herbs until well blended. Like I said, add in one egg, and it'll all come together nicely.
2.) Form the mixture into 28 balls (this actually made a good 22 patties) and form each around the tip of a skewer, flattening into a 2 inch oval and repeat with the remaining skewers.
This recipe actually calls to put these on at least 28 skewers that you pre-soak in hot water for 30 minutes for grilling- I, on the other hand, baked these in the oven for 25 minutes each at 365 degrees, flipping at the half way mark!
** Upon considering further I may even go with the frying method instead...or maybe my old George Forman grill :P
Or, cook on the grill to your desired degree of doneness- it calls for 6 minutes, but with all of my extras, I would go longer, about 10 minutes or so!
Enjoy with pita bread (store bought and not pictured) hummus (same :P)
chopped cucumbers with yellow peppers (leftover from the tzatziki, and soaked in lemon juice and olive oil, salt and pepper to taste) and fresh tomatoes, chopped and store bought, not pictured :P
...But enjoy anyways folks!
*Update* On tasting this...came out a bit dry from cooking, meh :3
However, with tikka sauce on it (or maybe covering them with foil to keep the moisture in) will keep them from dehydrating XD
