This will go with some Kofta Burgers I just made (and recipe follows) and its incredibly easy to make- taken from "DEBNJAMES" from AllRecipes.com!
* = Additional optional ingredient
Ingredients: 2 (8 ounce) containers plain yogurt (I still had a good large half cup of this from the Chicken Tikka recipe)
2 cucumbers, seeded, peeled and diced (have about 1 in there actually, the rest I'm reserving for the Kofta burgers)
2 tablespoons olive oil
1/2 lemon, juiced (only needed a couple of slices)
salt and pepper to taste
1 tablespoon chopped fresh dill (had maybe a 1/2 tablespoon of dried, thats all a small batch like this needs)
3 cloves garlic, peeled (about 1 good teaspoon or so of chopped garlic from a jar)
* 1 chopped fresh yellow pepper
* fresh chopped mint and parsley
Just use a food processor or blender, combine yogurt, cuke, olive oil, lemon juice, salt and pepper, dill and garlic and process until well combined...cover and refrigerate for one hour.
No, didnt use the processor, as I like it a bit good and chunky :P
But blend it all together and chill until ready to serve with the burgers :3
A good tip as well: DONT cut the pepper on the skin (except to cut it in half with the stem removed of course) as the skin is kinda tough- do it on the membrane, where its softer, and it'll chop faster than you can say "Pangolin" :P
