I try to open a new canvas and it's just a pure white screen directly to my eyes until it's done

Light mode for basically anything, really. More applications need a night mode... I don't know how I used to handle most applications I use it for before I started using dark/night modes. I imagine the darker pixels help slightly with power drain, too, which is nice, although I'm unsure of how true that assumption would be.
