So my roommate mentioned those old cheese stuffed breadsticks you'd get in school lunches and I got a mighty craving for them and looked for a recipe and found this: https://www.faithfilledfoodformoms......-bread-sticks/
Thoughts: I didn't roll the dough out thin enough, or rather, I did but had too much excess and folded it over rather than cut it off and it made it so it took a lot longer to cook the dough all the way. And it left a much higher bread to cheese ratio. I still have plenty of cheese sticks left over, so I'm going to try this again and make sure I'm not wrapping too much dough around them. Because these are tasty, but they'd be a lot better and more like what I remember if they have less bread around them.
Recipe is as follows:
Homemade Cheesy Filled Bread Sticks
Ingredients
1 pkg or 1 recipe of homemade Pizza Dough Or you can buy store bought. recipe
1 pkg String Cheese any flavor
1/4 Cup Grated Cheddar Cheese
Instructions
Roll out Pizza Dough fairly thin, in an oblong shape. Making sure that the dough is wide enough for string cheese with a 1/2 inch or so on end
Cut dough into sections and cut one string cheese in 1/2 or 1/4ths..however cheesy you want the middle
Lay a piece of string cheese in the middle of each piece of dough
Now roll up and put onto baking sheet close together…so that they become a pull apart when cooked…then sprinkle with Cheddar Cheese..
I always use cornmeal on my baking sheets when cooking breads or pizzas. It makes them not stick
Then bake at 375 degrees for about 15 min...or until golden brown.
