My hun ladynightosphere got back in touch with me, and I mentioned that I wasn't really a big fan of brown rice. BUT she had the idea of 'updating' it to something more Mexican style - and when she's right, she's right.
Ingredients:
1 onion, chopped
1 tsp chopped garlic
1 can chopped tomatoes
1 can black beans, rinsed
pepper + mrs dash (or "Dash" as its known now)
1/2 tsp ground cumin + coriander
1 tablespoon olive oil to coat your pan
1 cup brown rice (its more than enough to feed three people)
1 cup beef stock (or use veggie stock if vegan)
Then all you need to do:
Get a large saucepan
Saute your onions and garlic until translucent; put in your 1 cup rice and saute that for a few minutes.
Add in your spices
Add in the chopped tomatoes and stock
Add in the black beans
Bring to a boil - then turn down to a simmer, and cover and let cook for 30 - 35 minutes!
You can use your favorite wrap (trying to stick with low carbs on my end) and add in your favorite meat...chicken...fish...or just guacamole and maybe cooked tofu/seitan if vegan and roll it up!
Just needs a squeeze of lime to make it pop, but pretty good for a low fat meal!
