Kovat has brought to my attention, I had never made goulash before. I gave it a personal spin after he suggested it to me and then adopted a veggie variant to use for Leafbiting. I hope you'll enjoy!Lentil goulash~ (4-5 servings)
- 2 kg potate
- 3 large bell peps
- 2 large onions
- 3 large carrots
- 2 cans of lentil (~265 g each)
- 2 tablespoons of flour
- 1 can of diced tomate 400g
- Tomate concentrate 150 g
- 4 cubes of veg stock (enough for 2 liters of broth)
- 800 ml water
- 6 cloves of garl
- (Smoked) paprika powder. You can use regular paprika, but smoked gives it a uniquely pleasant flavour.
- Cumin powder
Peel and dice the potatoes and cook em with some salt. I used a firm potate for it. If you're using a crumbly potate, I don't think you need to add any flour.
Chop the onions and cut the peps into strips. Toss them into a large sauce pan/wok to fry them up in a little olive oil. Occasionally stir them up until the peps are gooey and roasted looking. Add the chopped carrots and fry them for a couple of minutes before adding the tomato paste and dice, water, stock, flour and garlic. Stir it gently and bring it to a gentle boil, then add the lentil. Add paprika and cumin to taste. Keep it simmering while occasionally stirring so the sauce thickens. Once the carrot is soft, it's ready to eat. You can either toss the potatoes in with the sauce or serve it separately~
