I made a thing tonight.
And heres the stuff I used to make it :
1/2: medium yellow onion
Cut to thin slices.
3: garlic cloves Minced.
1: yellow bell pepper
Cut to small dice.
2~3 ish: celery sticks
Cut to small dice.
1 larger red chili and 2 mini red chilis
Cut into small strips. Fine julienne.
1: large can crushed tomatoes
1: regular can of diced tomatoes
1/3 Cup: black, pinto, and black eyed peas
1-2 Tbsp: frozen corn
1-2 Tbsp: frozen peas
2 Cups: Rice
2 1/2 cup: water with 1 1/2 tbsp of Better Than Bouillon Chicken Stock mixed in
1/2 lb: 20/80 Ground Beef
1~ lb: Raw Chicken Breast
Cut to small dice.

Cut in basic slices.
JUST FOUR! 21/25 per lbs Fresh Shrimp
Optional deshell and devein them. I left the shells on to keep the flavor in better.
No specific amounts for seasoning. I just kinda seasoned to taste. Heavily, medium, and lite is what I will use to guess how I generally put in the seasonings.
To taste: Kosher Salt
To taste: Black Ground Pepper
Heavily: Cajun seasoning
Medium: Celery salt
Lite: Tarragon leaves
Lite: Basil
Medium: Oregano
Lite: Ground Ginger
Medium: Ground Coriander
Lite: Caraway Seeds
Lite: Thyme
Directions:
A1. Before you start cooking anything, you want to soak your beans for an hour in water or over night to make their cooking easier. Beans must then be cooked in salted water that is first boiling when you put them in, and then set on simmer for up to 2 to 4 hours.
1. Put all of your meat except for the shrimp into a pan on medium high heat with no oil in it. Once the meat is fully browned, drain the residual liquid from the pan.
2. Return meat to the pan and add in the onions, garlic, peppers, bell pepper, and celery. Mix and saute together until the vegetables look soft.
3. Add in the canned tomatoes, rice, water, and your seasonings. Remember to frequently taste your food before you accidentally over season it, or worse, over-salt it. Mix them all in and simmer on low for about 10 minutes.
4. Add in your shrimp, beans, corn, and peas and mix together. Re-season the shrimp specifically if you want. Simmer for another 10 to 15 mins until the rice begins to look done. If it looks too dry, add half a cup of water.
