From Chris - If you are a FULL diabetic, I would recommend not using the Heath chips - and as for the Splenda, less is more!
Recipe
INGREDIENTS

1 cup softened butter
1 cup sugar
1 large egg
1 tablespoon pure vanilla extract
1⁄2 teaspoon almond extract (optional)
2 cups flour
DIRECTIONS
Preheat oven to 350°F.
Cream butter and sugar.
Add egg, vanilla, and almond extract, if using, and beat well.
Mix in flour.
Drop by rounded teaspoonfuls onto parchment-lined cookie sheet and bake 10-12 minutes.

* From Chris: It is worth noting that Splenda does have its product available for baking, and you are able to use the same amount as you would for regular sugar (though I would still use less anyway, so that the lemon has a chance to shine through. Also lemon zest would give these a big boost.)
