Okay firstly, not the most flattering photo, I know, I just didn't want to crack out the nice plates for this since I was serving it up to multiple people, and the counter and stove are a bit dirty.
Anyway, I wanted to treat my mom to an alternative Thanksgiving meal where the same elements are used for different dishes. So here we have the first meal, lunch, which is ground turkey bulgolgi using this recipe: https://www.tasteofhome.com/recipes.....beef-and-rice/ and ginger rice, which is where you just cook ginger in some oil first before adding water and rice and cook the rice as normal. Then the green beans were bought fresh, tossed in olive oil, pepper, and garlic powder, and roasted at 425 degrees for 20 minutes. The rice and turkey are meant to be scooped in to lettuce boat leaves.
Thoughts: The bulgolgi and ginger rice with lettuce wraps was a delicious idea that is also cheap and I will do it again for sure. I cooked just enough so there was only a bit of meat left over, and it was a big hit with the others.
Recipe is as follows: (Just swap the beef out for ground turkey)
Ingredients
1 pound lean ground beef (90% lean)
3 garlic cloves, minced
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
2 teaspoons sesame oil
1/4 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon pepper
2-2/3 cups hot cooked brown rice
3 green onions, thinly sliced
Directions
1. In a large skillet, cook beef and garlic over medium heat 6-8 minutes or until beef is no longer pink, breaking beef into crumbles. Meanwhile, in a small bowl, mix brown sugar, soy sauce, oil and seasonings.
2. Stir sauce into beef; heat through. Serve with rice. Sprinkle with green onions.
Freeze option: Freeze cooled meat mixture in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.
