Normally the Pandaren are morally ambiguous. That's why the tradition formed that all Pandaren must eat a baby before going Horde Mode to prove they were legitimately evil, and not just morally gray.
It's the morality equivalent of a gender reveal, if your gender is Evil.
You can of course substitute a real baby for some sort of tree elemental Sapling as a vegan option, or if you're lame.
