Chicken:
Chicken thigh, cut into chunks, and marinate in a TBSP soy sauce and one clove garlic finely chopped for about 20 minutes. Batter 1/2 cup flour, salt and pepper to taste. Add oil to pan, fry until done.
Kinpira:
Burdock root, washed, cut into thin strips, and let sit in water until ready to cook. Chang water a few times until it is clean.
Shred carrot
Braising sauce
1/4 cup dashi stock
2tbsps sake
1table spoon mirin
1 TBSP sugar
1 1/2 TBSP soy sauce
1 TBSP black sesame seeds
1tbsp sesame seed oil
Drain burdock well mix with carrots oil fry pan and stir fry the two together lightly then add the braising sauce. This take awhile... Let cook down until liquid is almost gone, add the sesame seeds and oil.. Set aside
Miso simmered veggies:
Eggplant, chopped up into bite sized pieces
Soy bean sprouts ( about 2 cups)
1 cup chopped up spinach
Those white long mushrooms that I can't remember the name of for the life of me (enoki!!)
2tbsp miso
1/4 cup dashi stock
Salt and pepper to taste
1 TBSP mirin
1/2 TBSP soysauce
Simmer till soft.. Add spinach last.
Rice with figures... Like my very bad ghost... Need to practice!
veggies ( tomato and shredded cabbage)
