...Very simple recipe - you could probably do this in your toaster oven as well, though I went with my slow oven on my end!
- slices of sturdy, Italian bread
- 2 - 3 tablespoons olive oil (or enough to coat each slice)
1 fresh tomato (I had a big fat one I picked from my garden)
handful of fresh rosemary, basil and parsley (also from garden)
slices of mozzerella
good shake of crumbled feta
And all you need is a good piece of tin foil...
Your favorite cookie sheet or pizza pan sheet and cover with foil...
And bake at 275 F for about 30 minutes until everything slightly browns!
You don't need salt or pepper with this either, its great on its own...though you -could always put on a splash of balsamic or balsamic glaze!
Whats more, bruschetta, much like pizza, can be customized to what you like...so you could do sauteed broccolini...carmelized onions...figs with prosciutto, and with some gorgonzola crumblings (just go easy on that stuff, it is a STRONG cheese)...etc etc etc!

From Chris: As an updated tasting note, you can also scrape a piece of garlic (raw or roasted) on the bread if you really love the garlic, and certainly top with fresh herbs like basil, parsley or mint.
