Relatively simple recipe that tastes great! Had one night months ago when I just didn't know what to cook, and the random idea came to throw this shit together!
For the grits:
-1 cup organic stone-ground yellow or white corn grits(instant grits won't taste nearly the same, and not as good)
-3 1/2 cups water (It's normally 1 part grits to 4 parts water, but I like the extra thickness)
-1 tsp salt
-1 tsp black pepper
-1/4 stick of butter(I use land o'lakes)
-Decent little squirt of honey
-1 TBS heavy whipping cream
Saute mix:
-Pre-cooked pork shoulder that's pulled apart(as much as you like. I add a lot because I'm a meat-lover)
-One onion
-Couple stems of celeri
-One bell pepper
-1 cup of chicken broth
Directions:
Pour water into pot and bring to a rolling boil. Slowly pour grits into the pot while briskly stirring it with a whisk for about a good 30 seconds, as to prevent it from lumping too much during cooking. Bring down to about a low, or a 2 or a 3 on your conventional stove, and put a top over it(make sure to check every five minutes or so to make sure it doesn't boil over, just in case). Let that cook for about 30 minutes.
For the sautee mix, you want to pour some vegetable oil, or butter, or whatever you prefer into the skillet and put it on a six or a seven, or a med-high. Slap the veggie mix into the pan and stir generously, and after it grows translucent, add the pulled pork, try to sear and brown it nicely, add some cajun seasoning (cajunland, tony chaceries, or slap ya mama, whatever you like) to the meat, and then add the stock.
Once the grits look fully cooked, add some salt, pepper, honey, heavy cream for flavor. The grits should have a nice, sweet and salty flavor while the savory flavor of the saute mix compliments it. Just fix ya a bowl of grits, some saute mix, and enjoy! Hope you like!
