Mostly medium and large game. The jungle of Balreen has it's own diverse and unique ecosystem, but what could be considered 'deer', albeit scalier, larger and in much larger herds, is the main quarry regarding a source of food. Personal hunts for leathers, materials, and trophies can include anything from big cats to amphibious reptilians!
As for how hard they all are to hunt, a life adapted to the jungle means the Quadrudigitus homoavus are quite proficient with spears, knives, throwing spears and maybe the occasional bow. Tracking is also somewhat of an ease :>.

Plenty! There's a lot of birds of paradise that fly around, but they're rarely hunted as the meat on them is nowhere near as bountiful as that on a 'deer', per se. And why use a hard to catch bird's feathers for decor when you have your own :}}}

Absolutely. Most intruders get a warning and sent back, persistent ones are sacrificed and a bone or vestment is returned as a warning to the others. However, aggressive intruders, much like those from the utopian like city north of Balreen (City of Light), are quickly and ruthlessly dispatched.
It's a long, long, LONG story but, to tldr it. The Aviansie of Balreen, the Quadrudigitus homoavus, worship a deity called 'Montezuma'. He's powerful, has say over the jungle, the weather, blessings and plagues, so there must be sacrifices to him/them to appease them.
My bird is also called Montezuma, Monte in this case for easy differentiation, because he was moulded in the womb by the deity as the next Champion of Balreen. Thus, when Monte was born, ovoviviparously, all the tribesbirds of his tribe were like. "Whoa, this guy looks like the depictions of Montezuma, let's name him that to appease him.."
