Got some overripe bananas yesterday so I made some banana bread this morning.
here is my recipe
Can also use pecans or walnuts if desired, would need about 2 cups of chopped nuts.
Things you will need;
A stand mixer or hand mixer your preference, I have a 4-Court KitchenAid stand mixer.
rubber spatula, small mixing bowl, measuring cup, measuring spoons, toothpicks or metal rod for testing doneness 2 bread pans metal or glass your preference properly dusted for easy removal of product.
**WARNING**
*As always be aware of food allergies when combining cooking and consuming this product.*
Ingredients;
5 very ripe bananas.
2 cups granulated sugar.
2 sticks of unsalted butter soften.
1 tablespoon of Salt, your preference.
3 large or extra-large eggs, your preference.
1 tablespoon of baking soda.
2 tablespoons of baking powder.
3 cups of all-purpose flour.
1 1/2 tablespoon vanilla extract.
Mixing instructions and baking;
In a large mixing bowl or in your stand mixer combine butter, eggs, sugar, salt and vanilla extract, mix until ingredients combine, and a smaller mixing bowl combine dry ingredients flour, baking soda and baking powder then slowly pour into your mixer while on a slow to medium mix. After ingredients are all combined together pour about halfway full lightly tap on counter too remove air pockets and bubbles, place in a 375° oven for approximately 1 1/2 hours pending on cooking vessel and oven, place product in center of oven used toothpicks or metal skewer to test doneness should be able to poke about midway center of the loaf of bread and not get any wet batter stuck on stick.
