Woo. These are vegetarian, potentially Vegan (use vegan sauce and eliminate or substitute cheese) and with the right ingredients, also gluten-free as the "pasta" is actually just zucchini.
-
Equipment required**: Spiralizer/ "Zoodler" Or a lot of patience if you want to cut them in really thin strips.
Ingredients-
-SAUCE- You can use jarred sauce or make your own. I'm using a bit of leftover Tomato Soup by jeevestheroo . I changed his recipe to use vegetable stock/ veg. friendly ingredients. (Soup is here - http://www.furaffinity.net/view/17349804/ )
-Spiralized Zucchini. 1-3 depending on how much you eat or how many people :P
-Spring greens, baby spinach, mushrooms.
-salt, pepper, basil, minced garlic, sun-dried red chilies to taste.
-Feta cheese.
-butter.
Make it:
-Butter up a large pan (zucchini gets watery so I don't use a pot or any water.) and drop your garlic and herbs/seasoning in. Let it sweat for a couple minutes, stir zucchini and mushrooms in. If you like super soft mushrooms, put those in a minute or two ahead.
-When zucchini/mushrooms are almost tender, add sauce and greens. Stir and continue to cook until noodles are a consistency you like.
-Serve. Sprinkle with feta or garnish of choice; enjoy.
This is super quick and takes like 10 minutes to make :> It's perfect. If you're not vegetarian, that's cool too, add some sliced chicken or bacon and enjoy anyway.
