This is a staple recipe found in many nations and each one has its own variations
I use chicken but you can use pork or fish or meatless as well
Jollof Rice
1 1/4 cups white rice
1 medium chopped onion
1 pound boneless chicken breast
2 teaspoon vegetable oil
1 (6 ounce) can of tomato paste
3 cups chicken broth
1 tablespoon thyme
1 teaspoon ground red pepper
1. in sauce pan saute rice and onion in oil
2. Cover and cook until onion is translucent and soft
3. Cut chicken into 1/2 inch cubes and add to saute mixture
4. Mix in tomato paste, thyme, and pepper then mix in chicken broth
5. Bring mixture to boil
6. Cover pan and reduce heat to low.
7. Cook until rice is tender, liquid is absorbed, and chicken is fully cooked. About 20 to 25 minutes.
It's good hot or cold and a good anytime meal
This is a basic recipe but it's super versatile you can tweak it every which way for adding new spices or vegetables and it will almost always come out yummy!
