I usually just cover the entire character in a shade layer, and then erase the layer to do the highlights. In this case the shading layer wasn't dark enough, so I also make a second layer and put extra shadows around some of the edges, and behind the beer bottle.
I hope that's easy to understand; I'm no good at explaining things ^^;
