10 oz. fresh or frozen raspberries, thawed
2 Tbsp powdered sugar
1 1/2 C. sugar
1 vanilla bean, split lengthwise
4 firm ripe peaches
Vanilla ice cream to serve
1. Place raspberries and powdered sugar in a food processor or blender and puree. Press through a fine strainer and discard seeds. Set aside.
2. Put sugar, vanilla bean and 2 1/2 cups of water in a saucepan big enough to fit all the peaches. Set over low heat until sugar dissolves.
3. Bring to a boil and add the peaches, ensuring they are covered. Simmer for 5 minutes or until peach skin feels loose. Remove with a slotted spoon and remove the skin.
4. Scoop ice cream into a bowl or dish, add the peaches and spoon the raspberry sauce over. Serve immediately and enjoy <3
