Doesn't help that to make up for crappy AI, they actually give the computer NPCs increased chances of hitting, evading, getting critical hits, escaping status effects, and inflicting status effects. The only time your accuracy is what it's supposed to be is when you're playing human vs human. Or this is my understanding, anyway. Maybe I've been misled, but from experience, tales, and thinking, it seems about right.
If you look on the TV Tropes page for the computer being a cheating bastard, you'd notice that Pokemon has its own section. Yeah, everyone can sympathize with the both of us. :C
And now I am reminded of the time I made a togekiss with only moves that never miss under possible-hit conditions. Did you know it learns five of them throughout its stages and TMs and such?
Anyhow, can definitely sympathize with this one. Ever faced a low-HP staravia with double team and endeavor? Never again.

Aerial Ace, Aura Sphere, Magical Leaf, Swift, and Shock Wave, if I'm not mistaken. I've always had Aura Sphere on mine, but I let mine in HG learn Magical Leaf as well. :V
Oh god Endeavor is such a cheap move. :C It's part of one of the worst strategies out there in Pokemon. Too bad I've never used it myself.
