I honestly don't think I do it that well yet :'D
As for keeping track though, perspective guides are awesome (which is basically an array of lines, coming from 1 or more vanishing points on the horizon)
But yeh, the most important things are
* setting up your horizon line
* setting up your vanishing point(s)
* following these guidelines you've set up
* lotsa practice
* observe/analyze photos or even irl
It's the best I can tell you at this point c:
