I thought the photo looked better when I took it but now I notice there's a big shadow taking over half of it, but it's too late to fix it now. Oh well.
Thoughts: Sometimes I just love me some meat wrapped in lettuce, be it burgers, bulgogi, or this! It's crisp and feels a lot more healthy than using bread. These were delicious, the only real problem was that Hello Fresh sent us two heads of lettuce when in the end we only needed half a head of lettuce, so now I just have a bunch of lettuce to figure out what to do with. Anyways, the corn chips add a second type of crunch to the texture, and the lime sauce adds that extra POP that brings everything together.
Recipe is as follows:
1 unit Yellow Onion
1 unit Long Green Pepper
1 unit Lime
1 unit Baby Romaine Lettuce
1.5 ounce Blue Corn Tortilla Chips
10 ounce Ground Pork
1 tablespoon Fajita Spice Blend
1 unit Beef Stock Concentrate
4 tablespoon Sour Cream
½ cup Mexican Cheese Blend
1 teaspoon Cooking Oil
½ teaspoon Sugar
Salt
Pepper
Instructions
Prep
1 • Wash and dry produce. • Halve, peel, and finely dice onion. Core, deseed, and finely dice green pepper. Zest and quarter lime. Trim and discard root end from lettuce; separate leaves. Gently crush tortilla chips in their bag into small pieces.
Cook Pork
2 • Heat a drizzle of oil in a large pan over medium-high heat. Add onion, green pepper, and pork*. Season generously with salt (we used ¼ tsp; ½ tsp for 4 servings) and pepper. Cook, breaking up meat into pieces, until pork is lightly browned and onion is slightly softened, 4-5 minutes. • Add Fajita Spice; cook, stirring, for 30 seconds. Stir in stock concentrate, ½ tsp sugar, and 1 TBSP water (1 tsp sugar and 2 TBSP water for 4). Cook, stirring occasionally, until pork is fully cooked, 2-3 minutes more.
Make Crema
3 • Meanwhile, in a small bowl, combine sour cream, lime zest, and juice from one lime wedge. Add water 1 tsp at a time until mixture reaches a drizzling consistency. Season with salt and pepper.
Finish & Serve
4 • Remove pan with pork filling from heat; sprinkle filling with Mexican cheese. Cover pan and let sit until cheese melts, 1-2 minutes. • Divide lettuce leaves between plates; fill with pork filling. Drizzle with lime crema and sprinkle with tortilla chips. Serve with remaining lime wedges on the side.
