Ever had that urge for a sugary snack but lacked the desire to go out to the store? Yeah, I bet a lot of us have known that feeling this summer. Well, here's some good news: If you have sugar, honey and lemon juice in your home, you can just make the sugary snack yourself! Just follow my instructions after gathering the necessary ingredients and equipment!
Ingredients:
- 2 3/4 tbsp of honey
- 1/4 cup + 2 tbsp of sugar
- 1/4 cup of water
- 1 1/2 tbsp of lemon juice
Optional ingredients:
- Powdered sugar
- 1 1/2 tbsp of additional lemon juice
- 1 knob of ginger
Recipe:
1. Stir together the water, sugar and lemon juice in a pot over medium-high heat. If you want your candy to double as all-natural lozenges, add extra lemon juice and/or about 1 tsp of finely grated ginger at this point.
2. When the mixture boils, turn the heat down to medium-low and stir in the honey.
3. Cook the mixture, stirring frequently, until it reaches 300-305 degrees F on a candy thermometer. If you have no candy thermometer, test the mixture by dropping just a tiny bit of it into a bowl of ice-cold water--if it hardens, it's ready. This step also takes a good while, as I found out, so be patient--turning the heat up now and then helped things along for me.
4. Watch the pot closely while cooking, as the mixture will foam up as it gets hotter. Whenever this happens, take the pot off the heat briefly to allow the foam to subside, then place it back on to continue cooking. Stirring can also make the foaming subside.
5. Once the right temperature has been reached, take the pot off the heat and spoon the candy syrup into silicone moulds. This recipe makes about 15 candies, so make sure you have enough moulds ready. The candy syrup also hardens pretty quickly once taken off the heat and is tough to clean up, so work fast but carefully and rinse any unused syrup out of the pot right away!
6. Chill the moulds in the fridge until the candy hardens completely. It should take about 1 hour.
7. Remove the finished candies from the moulds, arrange them on a plate and, if desired, give them a dusting of powdered sugar.
And that's that--you've made your very own honey candy! Delicious, sweet, flavoured with natural ingredients, and easily modified into a quick remedy for a sore throat or upset stomach! And in the case of my batch, very adorably shaped! <3 Just make sure you keep them in the fridge when you're not eating them, as they do soften over time if not kept cold. Take care when eating them too, because they're real a stick-to-your-teeth kind of candy--just let each candy sit in your mouth and gradually wear down as you take in the flavour!
