marinade for the stew beef:
2cups of extra virgin olive oil
4 small bay leaves
6 sprigs of thyme
2 8-inch sprigs of rosemary
5 cloves of garlic (smashed)
1 tablespoon of whole black peppercorn
salt and pepper to taste
[cooking directions]
mix all ingredients in med saucepan over medium heat and let simmer for a couple minutes, then remove from heat and let it set to room temp.
then you take your thawed stew beef and marinade and place them both in an air tight container and sit in fridge for 4 hours.
once you've let it sit for 4 hours, then you remove the meat and discard the marinade. you blend together some pepper, salt, basil and thyme and mix it in with the beef to coat it slightly before cooking it.
and i advise to cook it in a cast iron pan on the stove because the pan will remain hot and even while cooking the beef
Cherry tomato salad ingredients:
2 pints of cherry tomatoes (sliced in quarters)
8-12 ounces of mozzarella[diced] (and i put a variation, because i used more than the recipe asked, and it turned out great still, so its mainly for you)
about a cup of loosely packed fresh basil (ripped up to sizable pieces)
1/2 teaspoon of sugar
1/4 teaspoon of salt
1 tablespoon of balsamic vinegar
1 medium shallot[diced]
2 tablespoons of extra virgin olive oil
[cooking directions]
take the cut up tomatoes and mis the salt and sugar with them and set in fridge for 30 minutes
after 30 minutes, place tomatoes in a salad spinner spin til all the liquid and speeds are removed
place the tomatoes to the side and strain the liquid
measure out about 1/2 a cup of the tomato liquid and discard the rest
place the liquid, balsamic vinegar and shallot in a med sauce pan and set over medium heat until its reduced to about 3 tablespoons
remove from heat and place in the fridge for about 5 minutes, or until cooled
after 5 minutes, whisk in the olive oil and salt and pepper to taste.
mix the tomatoes, basil and cheese together and then top with the dressing before tossing it one more time
