Who doesn't love Bruschetta?!

3# Roma Tomatoes
2 TBS plus more Olive Oil
Salt To taste
1 TSP sugar
1# Beef 80/20 Ground
1/2 yellow onion bruniose 1/8" dice cut
4 garlic cloves, two minced, two smashed
4 basil leaves, chopped
*PREHEAT OVEN TO 350*
1) Take three ROMA tomatoes and split lengthwise and place on a baking sheet coated with olive oil.
2) Use 2 TBS olive oil to coat all the tomatoes, sprinkle a heavy pinch of salt over all tomatoes, and 1 TSP of salt on to tomatoes. Sprinkle with minced garlic.
3) Roast in a 350F oven for 2 hours or until just barely holding shape
4) Move a rack 6" from top broiler, and turn it on to high.
5) For about 5 minutes or until begging to char, broil tomatoes. Let cool until able to handle
7) Heat small amount of oil in heavy saute pan and add smashed garlic when it begins to shimmer. Remove garlic when you can begin to smell garlic cooking. YES REMOVE IT
8) Saute onion in garlic oil until clear, remove
9) Cook ground beef in pan and remove beef from fat and oil, combine with onion.
10) Place tomatoes into food mill or food processor. If using a food processor there will still be skins in the sauce, but I don't mind I think it's more flavor and more I get to eat what I paid for. FOOD COST PEOPLE! Blend with basil until nice and smooth but not liquid.
11) Combine together beef onion and tomatoes and taste, add salt and pepper if needed.
BRUSCHETTA!
1 Italian or French loaf cut on a bias 3/4"
2 TBS extra virgin olive oil
1 BIG garlic clove, split
1 bag of arugula
1) Cut bread to the desired amount, and take a brush and brush on olive oil to both sides.
2) There are many ways to achieve the next step. If you can grill them, GRILL EM! It takes about 5 seconds per side to grill and it's the most authentic way. I use a toaster oven set to 400F and I flip the toast when the bottom begins to toast.
3) Take big garlic clove and rub all over the toasty bread, and top with a small salad of arugula.
