So let's say you want to impress some guests or your family with a tasty dessert, but you're short on money. Whatever will you do? Make a lovely mango pudding, of course! This Southeast Asian delight is sure to please anyone, unless they don't like mango, and it can be made without any dairy whatsoever, so it's friendly to the lactose-intolerant! And since this is my entry into
~FACCC2's budget challenge, I'll be listing what I paid for each ingredient this time!
Ingredients:
- 2 large red mangoes ($4.58)
- 1/2 cup of hot water ($0, water's free, silly)
- 1 packet of unflavoured gelatin powder ($3.80)
- 1/2 cup of sugar (I already had plenty at home, so I didn't need to buy any)
- 1 cup of coconut milk ($2.30)
Optional ingredients:
- 1-2 tbsp of lime juice (I already had a nice big bottle of lime juice at home, so I decided to use this)
- 1 tbsp of shredded coconut
- Fresh berries
- 1 additional red mango
Recipe:
1. Cut the mangoes into small pieces, separating as much of the flesh from the skin and pit as possible.
2. Place the mango flesh in a blender and make a smooth puree. Leave the mango in the machine for now.
3. In a small pot, heat up the water over high heat until it reaches a boil, then remove it from the heat. While stirring the water with a whisk, sprinkle the gelatin over the surface and stir briskly to prevent any lumps.
4. Add the sugar to the hot gelatin water and keep whisking to dissolve it.
5. Add this mixture to the mango puree in the blender.
6. Add the coconut milk and blend briefly until the ingredients are combined. For a brighter flavour, you might want to add lime juice to the mixture before blending.
7. Pour the resulting pudding into dessert bowls or cups, cover them in plastic wrap, and keep them in the fridge for at least 4 hours (or up to 24 hours if you're making them in advance for any reason).
8. Serve cold on its own or with some shaved coconut, berries or additional mango pieces on top if desired.
