I'm hoping Bethesda will BS the Lilmothiiit back into existence somehow. There's other continents and regions outside of Tamriel. There's Yokuda, Thras, Ynslea. Akavir, Pyandonea, Atmora where Ysgromor and Talos came from. So any one of them may have a surviving race of the Lilmothiit that survived the knahatan flu
Last time i checked about the lilmothiit it mentioned them fleeing deeper into... What was it again,. blackmarsh? Territory in wich no humans reportetly dared venture as the argonians there just about killed any trespassers. So, while there is a good chance for them to be actually dead, there is also a small chance for them to simply have survived there, more or less protected by the argonians. Problem is, not much is written about them so that is really all that is there to be read about it.
In case you're still curious, no, they're their own species, but have an EXTREMELY close symbiotic relationship with the Hist trees. For example, argonians need Hist sap to go through puberty. The trees are telepathic and have a hivemind, one which they can pull argonians into in case of extreme emergency, with the most well known case being the Oblivion Crisis.
^ This. Though to be more accurate, they are *believed* to be extinct. One speculation about their disappearance is that the Knahaten Flu may have had something to do with it.
Nobody in Tamriel has seen a Lilmothiit for a long time, maybe centuries. All current information about them (including their appearance) comes from the ruins they left behind, ruins that the Akaviri typically built prisons on.

Interestingly enough, this opens a can of worms in regards to what the curse can turn you into. Since the Lilmothiit are, presumably, extinct, the fact that the curse chose to transform Torgir into a race that does not really have any kind of spotlight in the mass consciousness, besides the general idea of being a "Beast" race.
What I mean by this, when Torgir was referring to other races, he likely wasn't even subconsciously thinking of the Lilmothiit in his assessment. So the fact that the curse chose to go in this direction might be telling that Sheo is being a bit more of an active force in this then set parameters to the curse and letting it go.

It seems to be even worse than you think! This mematic curse seems to work on turning people into the thing they are most racist about, and in events of equal racism, then we get the whole RNG factor.

I'd argue that your first comment about people becoming what they are most racist towards is inaccurate, seeing that Delphine doesn't have scales and a set of wings instead of arms (unless you'd count that under speciesist, but the same then would have to apply to the argonians as well)
