These were so good, I had already finished two of the pancakes before realizing I had to take a picture xD
1c Flour
1/4c Sugar
1/2c Milk
2 Eggs
1 Tsp Baking Powder
3/4c Cherries, stemmed, pitted, and cut into eights.
Seeds of one vanilla bean.
Chocolate chips (I used mini chocolate chips).
1 Tbsp butter, softened (optional)
1 Tsp Vanilla Extract (optional, gives an extra layer of vanilla flavor)
Mix eggs, milk, flour, sugar, baking powder, vanilla extract, butter (optional), and seeds of the vanilla bean to a smooth consistency that drizzles off the whisk (should not be cake batter thick, or water thin, add milk or flour to achieve your desired thickness).
Melt a small amount of butter in a pan over medium heat (I have an electric induction stove, and I cook on setting 4), spoon in 1/2 ladle full into the pan, after 30 seconds or so, sprinkle in chocolate chips and cherry pieces. Check underside periodically for doneness (a nice golden brown color, pancake is 60-70% done), flip and cook for another 60 seconds or so.
Thing I've learned: I have very thick pans, and I've learned that if you're going to make a whole batch of these that the heat needs to be kept low, and the whole pan needs to be brought up to temperature. If you have the heat to high, or if the pans is not completely brought up to temp, your first pancakes may be good, be the rest will cook too quickly, and will either burn on the outside, with a cooked interior, or have cooked outsides with a raw interior.
