Chicken Stir-Fry
Notes: Sorry the picture's not very good quality. x3
You can add pretty much whatever and however many vegetables, noodles, meat or sauces you want. This is just what I used. It's more or less the same method.~
And please note I'm something of an amateur, and I tend to do everything pretty rushed and spur of the moment. xD;; And my writing? Not very organized, so please bear with me.
Not to mention I don't really have a lot of fresh ingredients at my disposal so I'm going by just what my mom grabs for me at Wal-Mart. Still, the results are pretty delicious and this is one of the few things my entire family likes.
INGREDIENTS:
2 medium or large boneless chicken breasts.
1 box spaghetti noodles.
1 can baby corn.
2 cans water chestnuts. (Or 1 big can, I guess. The ones we get are small.)
1 bag snow peas.
1 can mushrooms.
About 1/4 of a red onion or maybe one chopped green onion.
Oil (your choice, I use vegetable oil just 'cause we always have it.)
Soy sauce.
Lemon juice.
Salt, pepper, any other seasonings to taste.
YOU'LL ALSO NEED:
Either a wok (we don't have one, so I don't know really how to use one. You're on your own lol.)
or
A big saucepan. Like, the biggest one you have probably.
A pot (enough for the spaghetti).
Possibly a smaller pan to cook veggies separately that maybe everyone doesn't like. We had to cook the mushrooms and onions separately because dad and my sister don't like them.
If you can't fit all the food together in the big pan, get a big pot to put everything in at the end.
STEPS:
1. Prepare spaghetti as it says on the box. You don't have to use the whole box, but I'd recommend it. I'd add however much salt it says so it doesn't get sticky.
2. While the water's boiling, pour just enough oil into your big pan to cover the bottom and spread around the sides. Then add some soy sauce, lemon juice, salt and pepper, and any other spices you choose, and kinda slosh it around so it all gets mixed up. Let that heat up on about medium heat or a little bit over that.
3. Clean and cut up your chicken breasts. Add them to the pan, and be sure to keep an eye on them and flip them when they need to be (I use tongs to flip them over). Occasionally add more soy sauce and lemon juice to make sure it gets evenly flavored.
4. Open your veggies and clean them all thoroughly. Chop up your onions to desired thickness.
5. When your chicken's almost done, start (carefully) adding your veggies. Add more soy sauce, lemon juice, etc with each group of veggies you add, and stir everything together. Make sure the chicken's all cooked well. Add more salt and pepper, stir.
6. Put the lid on and let it cook on low heat, stirring occasionally. Once your spaghetti's done cooking, turn off the heat, strain it, and keep the lid on so it stays hot.
7. Once all the veggies are done, mix everything really well once more and add a little more sauce (yeah, this stuff takes a lot of soy sauce and lemon juice, sorry xD). Put the spaghetti in the big pot and add the chicken and vegetables. Stir everything together and serve!
I hope this wasn't confusing; I'm not good at doing stuff in order. xD;; Aside from timing, it's not all that hard to make. This makes enough for at least five people, and maybe seconds/leftovers.
