Time for another recipe- and this is one I totally 'winged it' since I didnt get much in the way of instructions (not that I would really follow them to begin with :P)
And this goes with another dish that I -did- get from Cooking Light magazine, which I think is a great cooking mag :3 (Youll see it in the next post)
All you need is:
- 4 tomatillos, sliced (you can find these in your regular market now)
- 1 jalapeno, sliced open and seeded
- 1 serrano pepper, do the same as the jalapeno
- 1/2 yellow pepper chopped (this is optional, I had it leftover from the peach soup recipe)
- 4 radishes (also optional)
- 1/2 vidalia onion, sliced
- 1/2 bag cole slaw mix (yes its pre made, but its a time saver :P)
- cilantro (I used dried, but I think fresh would be better in this)
- 1/2 tsp cumin
- salt and pepper to taste
- 2 to 3 tablespoons low fat mayo (or at least enough to coat it throughout)
- one or two good spritzes of lemon juice (from the squeezy lemon bottle- if you do fresh all you need is a slice)
- 1/2 cup dried cranberries
Then:
Grill the tomatillos, onion, jalapeno and serrano- MAKE SURE you keep an eye on those , they grill QUICK!
Once those are good and slightly browned- find yourself maybe a couple of cheap paper plates - as in get a good stack- then throw those onto the plate to chop...once youre done all you have to do is throw out the plate :3
- Or if you have a decent cutting board, use that and then just wash it off when youre done :P
Throw them all into a bowl...then stir in the cole slaw....fold in the mayo one spoonful at a time...then add in the cilantro, cumin, salt and pepper ....
And then throw in another spoonful to get it good and coated, and stir in the uncooked radish and yellow pepper for the crunch! The cranberries are also optional, but they add a bit more tart if your low fat mayo is a bit more sweet than you'd like!
Thats it ...all the hassle is mainly in the prep work, but the rest is cake (or slaw in this case :P)
As another option, you could throw in fresh red tomatoes with this- thats even more color/flavor- along with a dash of El Yucateo green habanero sauce (if you use the red stuff, just remember a little goes a LONG way xd)
And to go with it...next up...ROOT BEER CAN CHICKEN :D
