Dumb observation, but I feel like saddlebags would be too inconvenient for a centaur--having to reach back every time you needed to pull something from them, especially considering you would need someone else to put them on or take them off. I feel like bags slung around the shoulder, or sat on the hips or 'neck' would be a lot more functional.
