Spaghetti With Homemade Meatballs
Ingredients:
1 box spaghetti
1 jar spaghetti sauce
Meatballs:
1 package turkey burger
1/2 vidalia onion, chopped (you can use the regular, but I find this gives a much sweeter taste)
couple of tablespoons of extra virgin olive oil
salt & pepper to taste
pinches of oregano, parsley, thyme and rosemary- and remember folks with savory spices like rosemary & thyme, less is more!
lemon zest
1/2 teaspoon nutmeg
1 teaspoon of chopped garlic
1 cup italian breadcrumbs
1 egg
All you have to do is- find a large bowl and put in the turkey burger...
Saute' the onions with the olive oil, salt and pepper (maybe even a bit of the parsley, I also put in the lemon zest when cooking) and cook until translucent but NOT caramelized (I'm sure it would add to the sweetness, but I just cant see myself doing that :P)
Then throw in the onions, mixing well with the meat - then add the crumbs, egg, and spices.
Form and shape the meatballs and then put them on a pre-greased cooking pan...
Then here's another thing to keep in mind- instead of frying them- bake these meatballs at 350 degrees for about 30 minutes- turn them over at the fifteen minute mark ...
While thats cooking, boil up the water to cook up the spaghetti...and at the 5 minute end stretch of cooking, you can either 'cook' the balls with the sauce or simmer it separately in a small saucepan!
