Southwest Grilled Pizza
Ingredients:
3 Cups all purpose flour
1 pkg. yeast
1 tblsp. Olive oil
1 tsp salt
1 cup warm water
1lb chicken breast (boneless skinless)
Juice of 10 limes (key)
4 garlic cloves
Salt and pepper 1tsp each
2 balls of Buffalo mozzarella
2 cups pepper jack cheese
1 red bell pepper
1 red onion
Cilantro (Coarsely chopped)
1 small can of chipotle in adobo sauce
2 cans of diced tomatoes
1 can tomato sauce
½ cup honey
3 avocados
1 small container of sour cream
8oz mayo
1pint buttermilk
1tsp of each dill oregano and thyme
1 pkg of ranch mix
Dough procedure:
Mix the yeast with the warm water and set aside in a warm spot for 15 minutes. Mix in the remaining ingredients and let proof for 1 hour covered with a damp cloth. Knead dough for 3-5 minutes and cut into 2 portions and work into elongated ovals. Grill on medium heat until done. Set aside until ready for toppings and sauce.
Chicken procedure:
Add the lime juice, crushed garlic, salt and pepper. Combine with chicken in a bowl and marinade for up to 2 hours. Then grill on medium heat until done slice and hold at 140 degrees until ready to top pizza.
Toppings procedure:
Slice the red bell pepper and red onion to desired size sauté with 2 tablespoons of butter over medium high to high heat until caramelized. Shred the pepper jack and mozzarella chesses.
Sauce procedure:
Blend ½ the can of chipotles with adobo sauce with the one can of tomato sauce and bring to a simmer, add the two other cans of diced tomatoes and 3 cloves of garlic crushed.
Dipping sauce procedure:
Combine mayonnaise, sour cream, herbs, buttermilk, and avocados mash and combine until smooth.
Combining procedure:
Take the grilled dough and spoon a thin layer of sauce, top with chicken, onions and bell peppers, cover with the cheeses and place in a 375 degree oven until golden.
