Your basic meatball and tomato sauce, courtesy of chrismukkah :B

A classic Italian recipe that is very, very easy to make :B
Ingredients:
1/2 to 1 pound ground turkey burger
1 cup white rice (pre-cooked)
1/3 to 1/2 cup italian breadcrumbs (You can also use the panko style for a bit more crunch, or, any kind of toasted bread - I've always wanted to experiment with toasted focaccia myself)
1 egg
1 clove finely chopped garlic
parmesan cheese (optional)
pinch of nutmeg (also optional)
lemon zest (optional)
can of your favorite tomato sauce (yes, I cheated, sue me :P)
To make:
Just get a big bowl and mix them all together (except for the sauce)!
Get a large cookie tray / pan - cover with tin foil - and preheat the oven for 350 F
I'd recommend using olive oil spray, just give the pan a light coating!
Put in the fridge for maybe 5 minutes to firm up - then you can use your paws...er...hands...or an ice cream scoop to get the size you like!
And then bake for 20 to 25 minutes until brown, and just flip them at the halfway mark...
And in the meantime, just keep your sauce to a simmer in a small saucepan, (and keep it covered - tomato sauce has a nasty habit of splattering all over your stovetop if you dont keep your eye on it!) then serve with the meatballs when the time has elapsed!
Makes about 8 -14 meatballs :3
Delicious, and they dont get dried out because of the egg/rice/bread mix you put in there...though you can always put in maybe 1-2 tsps of the sauce into the meat mix to be safe!

* As a small update/tips
mentioned:"I myself when I make meatball types I put grape seed oil mixed with olive oil in a spray bottle which also works for those pans that say no cooking spray.... I find it gives a better flavor and the grape seed oil has a higher heat tolerance......
Also I found out if you put a thin layer of the sauce like it was painted on the sheet, the flavor of the sauce will cook in without saturating the meatball and hiding the flavor of the meat..... "
Both good ideas, I will give that a try the next time I make this!

~ Other updates: I have seen other recipes where there are fillings inside the meatballs as well (usually a good chunk of mozzarella or other Italian cheese), along with stuffed olives, raisins/currants, even grilled peppers/eggplant.
~ Remember to get a good dark brown sear on the meatballs, that is where the flavor is.
~ While this is turkey burger straight up, I prefer more of a blend of turkey burger with ground beef with just a little fat in it, so that way the meatballs dont end up too dry.
