Ingredients
1 pack of active dry yeast
1/8 cup hot water
3/4 cups warm milk
1/4 cup white sugar
1/2 teaspoon salt
1 egg
1/6 cup shortening or butter
3 cups all-purpose flour
vegetable oil for frying
1/6 cup butter
1 cup confectioners' sugar
3/4 teaspoons vanilla
1 1/2 tablespoons hot water
(optional) cinnamon sugar
Directions
Sprinkle the yeast over the warm water, and let stand for 10 minutes, or until foamy.
In a large bowl, mix together the yeast mixture, milk, sugar, salt, eggs, shortening/butter, and 2 cups of the flour. Mix for a few minutes of stirring with a wooden spoon. Beat in remaining until the dough no longer sticks to the bowl. Knead until the dough is smooth and elastic. Place the dough into a greased bowl, and cover with plastic film. Set in a warm place to rise until double for 2 to 3 hours. Dough is ready if you touch it, and the indention remains.
Put the dough onto a floured surface, and roll out to 1/2 inch thickness. Cut the shape you want with a doughnut cutter (or the top of the cup if you don’t have a doughnut cutter). Let doughnuts sit out to rise again until double for about an hour. Cover loosely with a cloth.
Melt butter in a saucepan over medium heat. Stir in confectioners' sugar and vanilla until smooth. Remove from heat, and stir in hot water until the icing is somewhat thin, but not watery. Set aside.
Pour 2 to 3 inches of oil (vegetable or canola) into the skillet. Heat oil in a deep-fryer or large heavy skillet on high for ten minutes. Once the oil is hot enough turn the temperature down to medium high. Slide doughnuts into the hot oil using a wide spatula. Turn doughnuts over as they turn a golden brown on one side. Remove from hot oil, to drain on a wire rack. Pour the icing by the spoonful on each doughnut until the top is mostly covered. (optional) sprinkle the tops with cinnamon sugar is you wish to add a little extra flavor.
